Pork With Pineapple Salsa

- 1 (20 ounce) can unsweetened pineapple tidbits
- 1 (1 -1 1/2 lb) pork tenderloin
- 3 tablespoons brown sugar, divided
- 2 tablespoons Dijon mustard
- 1 teaspoon paprika
- 12 teaspoon ground ginger
- 13 cup chopped sweet red peppers or 13 cup green pepper
- 14 cup chopped green onion
- 14 teaspoon red pepper flakes
Directions

1Drain pinapple, reserving 1/4 cup juice.

2Set aside 1 cup pineapple.

3Place pork on a rack in a shallow roasting pan.

4Combine 2 tbls paprika, mustard, ginger.

5Spread half over pork.

6Bake uncovered at 450 degre.s for 15 minutes.

7Spread with brown sugar mixture.

8Bake 15-20 minutes longer or until meat reaches 160 degrees.

9For the salsa combine the red or green peppers, onions, pepper flakes, pineapple and juice in a bowl.

10Let pork stand five minutes before slicing.

11Serve with a spoonful of salsa on top.
