Portuguese Beans

Ingredients

  • 2 lb. dried pink beans
  • 1 lb. bacon
  • 2 medium onions
  • 2 to 3 tsp. cumin seed
  • 1 (15 oz.) can tomato sauce
  • salt and pepper to taste

Directions

    Soak beans overnight with 2 to 2 1/2-quarts of water. Cook in a covered pot on low heat until almost done. Cut bacon and onions into small pieces.

    Brown separately. Drain well and add to beans. Add remaining ingredients. Continue to cook on low heat 3 to 4 hours.

    If a more thickened sauce is desired, remove lid and increase heat for awhile.

    Makes 3 to 4 quarts.
