- 2 tsp Olive oil
- 4 lb Boneless chuck roast
- 1 Onion
- 2 clove garlic
- 1 tsp Salt
- 1/2 tsp black pepper
Directions

1preheat oven to 325F

2Heat dutch oven on top of stove over medium high heat

3Sear all sides of meat in oil

4remove meat from pan
-
5arrange onion and garlic in bottom of pan and sprinkle with salt and pepper

6return meat to pan and cover

7Cook in oven for 30 minutes at 325
-
8reduce heat to 300 and cook for 1 and a half hours
-
9remove roast and let rest for 10 to 15 minutes
