  • 1 lb. Italian sausage (hot or mild) or Spanish chorizo, sliced
  • 1/2 c. chopped onion
  • 2 c. (No. 1 can) tomatoes
  • 4 potatoes, pared and diced (6 c.)
  • 1/4 c. chopped parsley
  • 1 c. diagonally sliced celery
  • 2 Tbsp. chopped celery leaves
  • 1 1/2 c. water
  • 2 beef bouillon cubes
  • 1 bay leaf
  • 1 tsp. salt
  • 1/2 tsp. dried leaf thyme
  • 1/4 tsp. pepper
  • 1 Tbsp. lemon juice

    In a large saucepan, brown sausage over medium heat.

    Add onion and cook 5 minutes.

    Add rest of ingredients; bring to a boil.

    Reduce heat and simmer, uncovered, 40 minutes or until potatoes are tender.
