  • 1 c. mashed potatoes
  • 1 Tbsp. butter
  • 1/2 tsp. baking soda
  • 1 c. buttermilk
  • 1 Tbsp. honey
  • 2 tsp. baking powder
  • 1 Tbsp. brown sugar
  • 2 c. flour

Directions

    Stir butter into potatoes. Dissolve baking soda in buttermilk; add honey. Mix baking powder, sugar and flour. Add milk and potatoes. Press into a circle 3/4-inch thick. Cut with biscuit cutter. Bake at 400° until golden brown, approximately 17 to 18 minutes. Yield: 16 to 18 biscuits.
