- 3 c. leftover mashed potatoes (room temperature)
- approximately 3/4 c. self-rising flour (make batter slightly stiff)
- 2 eggs, beaten
- salt and black pepper to taste
Directions

1Mix ingredients.

2Heat 2 sticks butter or margarine in skillet.

3Drop by teaspoon into hot margarine.

4Fry until golden brown on both sides.

5Drain on paper towels and serve at once.
