- 1 Irish potato (small)
- 1 tsp. butter
- 1 lb. box powdered sugar
- peanut butter
Directions

1Boil potato in jacket until tender.

2Peel and mash; add the butter.

3Sprinkle 1/2 box powdered sugar over waxed paper.

4Work the rest of the sugar into the mashed potato.

5Roll this mixture onto the waxed paper to a thickness of 1/4 inch.

6Spread the peanut butter over the potato mixture.

7Roll up as you would a jelly roll.

8Wrap the roll in wax paper and chill for about 2 hours. Cut into slices about 1/4-inch thick.

9This is an old-fashioned recipe and this candy will not keep very long.

10So keep in refrigerator as much as possible.
