  • 1 medium baked potato
  • 1/2 lb. powdered sugar
  • 2 Tbsp. vanilla flavoring
  • 2 Tbsp. margarine, melted
  • peanut butter

Directions

    Use fork and mash potato fine.

    Add melted margarine and vanilla.

    Start mixing powdered sugar until thickens like cookie dough.

    On aluminum foil, spread powdered sugar (to keep from sticking) and roll out dough to 1/4-inch thick sheet.

    Spread layer of peanut butter over dough and roll into long roll.

    Wrap in Saran Wrap.

    Cool until firm.

    Cut into slices.

    Dust with powdered sugar until not sticky.
