  • 6 large potatoes, boiled
  • salt and pepper to taste
  • 1 pt. sour cream
  • 1 bunch green onions, chopped
  • 1 1/2 c. grated medium cheese (or more, if desired)

Directions

    Dice or grate potatoes into large bowl.

    Season and add other ingredients, saving some cheese for the top.

    Mix with a fork. Put into a 2-quart casserole or baking pan.

    Top with remaining cheese and sprinkle with paprika.

    Bake uncovered at 350° for 40 minutes or longer until bubbly in the center.

    Some buttermilk added to the sour cream enhances flavor and moistness.
