  • 8 medium potatoes, cooked in water with bay leaf
  • 1 can cream of chicken soup
  • 1/4 c. melted butter
  • 1 1/3 c. sour cream
  • 1 tsp. salt
  • 1 small onion, chopped
  • 1 1/2 c. grated mild Cheddar cheese

Directions

    Cool cooked potatoes; peel and grate coarsely.

    Spread in 9 x 13-inch pan.

    Mix remaining ingredients and pour over potatoes. Cover and bake at 350° for 30 to 35 minutes.

    Sprinkle with 1/2 cup more grated cheese and bake a few minutes more.
