Potato-Cheese Casserole

- 2 lb. baking potatoes
- 1 1/2 c. shredded Swiss cheese
- 1/4 c. minced onion
- 1 tsp. salt
- 1/2 tsp. dill
- paprika
- 1 1/2 c. sour cream
- 1 medium carrot, peeled and grated
- 2 Tbsp. minced parsley
- 1/8 tsp. black pepper
Directions

1Bake potatoes in jackets until tender.

2Peel and grate. Combine potatoes with sour cream, 1 cup cheese, carrot, onion, parsley, salt, dill and pepper.

3Turn into buttered, 1 1/2-quart casserole.

4Sprinkle with remaining cheese and paprika.

5Bake at 350° for 30 to 40 minutes.
