Potato Chowder

Ingredients

  • 8 slices bacon
  • 1 c. chopped onion
  • 2 c. cubed potatoes
  • 1 c. water
  • 1 can cream of chicken soup, not diluted
  • 1 c. sour cream
  • 1 3/4 c. milk
  • 1 tsp. parsley flakes
  • salt and pepper to taste

Directions

    Fry bacon until crisp.

    Saute onion in bacon grease for 3 or 4 minutes. Drain off fat.

    Add potatoes and water. Cook until potatoes are tender. Add sour cream and soup.

    Gradually add milk. Stir in salt, pepper, bacon and parsley.

    Heat to serving temperature (not boiling).

    If too thick, add milk, chicken broth or water.
