  • 4 potatoes
  • 3 green onions
  • 1 clove of garlic
  • 1/2 cup freshly grated parmeasan cheese
  • 2 eggs
  • 1 Italian seasoned bread crumbs

Directions

    Peel and slice potatoes, add the to salted boiling water for about 15

    Slice the green onions, mince the garlic and add them to a pan with about a table spoon of hot olive oil, and sautee until fragrant

    Drain potatoes add them to a mixing bowl with the green onions and garlic and parmeasan and mash it all together

    Cover and cool in the fridge for about 30 minutes

    In a mixing bowl add the eggs and beat

    Mold the potatoes into fingers, dredge them in the egg and roll them in the bread crumbs until evenly coated

    Fry them in about 1/4 inch of good olive oil and keep moving them around so they get crispy all over
