- 3 eggs
- 1/3 c. matzo meal
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 onions
- 2 lb. potatoes (approximately 5 to 7)
- oil (for frying)
Directions

1Beat eggs in large bowl.

2Add matzo meal, salt and pepper. Grate onions and potatoes (after peeling) and place in colander. Run boiling water through to help retard color change.

3Mix onions and potatoes in bowl with egg mixture.

4Fry in oil until brown on both sides.

5Drain on paper towels.

6Makes about 14 medium size latkes.
