  • 3 eggs
  • 1/3 c. matzo meal
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 onions
  • 2 lb. potatoes (approximately 5 to 7)
  • oil (for frying)

Directions

    Beat eggs in large bowl.

    Add matzo meal, salt and pepper. Grate onions and potatoes (after peeling) and place in colander. Run boiling water through to help retard color change.

    Mix onions and potatoes in bowl with egg mixture.

    Fry in oil until brown on both sides.

    Drain on paper towels.

    Makes about 14 medium size latkes.
