Potato Pancakes

Ingredients
- 4 medium potatoes
- 1 medium onion
- 1 egg, lightly beaten
- 1 tsp. salt
- 1/4 tsp. nutmeg (optional)
- 1/4 tsp. white pepper
- 1/2 tsp. baking soda
- butter (as needed)
Directions

1Wash and peel potatoes.

2Then drop them into cold water and let stand 1 to 2 hours or overnight, if desired.

3Grate potatoes with a fine grater and press to squeeze out excess liquid.

4Peel and grate onion into the potatoes.

5Add the egg, seasonings and soda.

6Mix well.

7Heat 1 1/2 teaspoons butter in a large skillet and add one spoonful of the mixture for each pancake.

8They should not be too thick.

9Cook gently until golden brown on the bottoms, then turn and brown the other side.

10Add more butter to the skillet and continue cooking the pancakes until all the mixture is used.

11Serves 4.
