  • 4 to 5 lb. potatoes
  • 1 large onion
  • 1 to 2 eggs
  • 1 tsp. baking powder
  • 5 Tbsp. flour
  • 3 Tbsp. bread crumbs
  • 2 tsp. salt
  • 1/2 tsp. pepper

Directions

    Grate potatoes and onion (drain some liquid).

    Stir in remaining ingredients.

    Heat oil in skillet.

    Drop potato mixture by spoonful into skillet.

    Fry until crisp and golden brown. Drain on brown paper.

    Serve with applesauce.
