- 4 medium potatoes
- 1 small onion
- 2 medium eggs, slightly beaten
- 1 Tbsp. flour
- 1 tsp. salt
- 1/2 c. vegetable oil
Directions

1Peel potatoes and onion; grate both into mixing bowl.

2Add slightly beaten eggs, flour and salt; mix well.

3Heat oil in heavy skillet.

4Drop potato mixture into hot oil by 1/3 cupfuls, forming ragged cakes.

5Cook over medium heat until crisp and brown (resist the urge to turn pancakes too quickly).

6Serve with hot maple syrup and butter or applesauce.

7Terrific for breakfast/brunch or as a side dish at dinner.
