- 1 c. mashed potatoes
- 1/2 c. potato water
- 1 1/2 c. warm water
- 1 pkg. yeast
- 3/4 c. shortening
- 2 eggs, well beaten
- 3/4 c. sugar
- 3 tsp. salt
- 8 c. flour
Directions

1Let yeast soften in warm water.

2Combine fresh mashed potatoes with potato water, sugar, shortening and salt.

3When cool, add softened yeast, beaten eggs and 4 cups flour.

4Beat with electric mixer until smooth.

5Let rest 1/2 hour, then work dough with other flour by hand.

6Knead until smooth as satin.

7Round in a ball and place in well-greased bowl.

8Cover and let rise until double. Make into rolls.

9Bake at 400° for 10 to 15 minutes.
