Ingredients

  • 6 to 7 c. flour
  • 2 pkg. yeast
  • 1/2 c. lukewarm water
  • 1 c. warm, mashed potatoes
  • 2/3 c. shortening and butter, mixed
  • 1/2 c. sugar
  • 1 1/2 tsp. salt
  • 1 c. lukewarm water
  • 2 eggs, beaten

Directions

    Dissolve yeast in 1/2 cup lukewarm water and set aside. Combine potatoes, sugar, salt and 1 cup lukewarm water in bowl. Add yeast mixture, eggs and shortening-butter mixture.

    Stir in flour gradually.

    Mix well.

    Place in a greased bowl and let rise until double its size.

    Punch down and form rolls.

    Let the rolls rise until double in size.

    Bake at 400° for 12 to 15 minutes. Makes 6 dozen.
