- 4 large baking potatoes
- butter flavored cooking spray
- 1/2 tsp. salt
- 1/4 tsp. ground pepper
- 1/4 c. plain nonfat yogurt
- 1/4 c. low-fat sour cream
- 2 Tbsp. minced fresh chives
- 1 tsp. paprika
Directions

1Scrub potatoes thoroughly and prick several times with a fork. Bake at 450° for 45 minutes to 1 hour or until done.

2Allow potatoes to cool to touch.

3Cut potatoes in half, lengthwise, and scoop out pulp, leaving 1/8-inch thick shells.

4(Reserve pulp for other uses.)

5Cut each potato shell lengthwise into 4 strips and place on ungreased baking sheet.

6Spray potato strips lightly with cooking spray.

7Combine salt, paprika and pepper.

8Sprinkle over potato chips.

9Bake at 425° for 14 minutes or until crisp.
