- 2 c. mashed potatoes
- 3 egg yolks
- salt and pepper to taste
- 1 Tbsp. minced parsley
- 1 Tbsp. minced ham
- 3 egg whites
Directions

1Beat together the mashed potatoes and egg yolks.

2Salt and pepper to taste.

3Add parsley and minced ham.

4Beat the egg whites until stiff; fold into potato mixture.

5Place in greased open casserole.

6Bake for 25 minutes in a 350° oven.
