Potato Soup

Ingredients

  • 6 potatoes, diced
  • 1 small onion, diced
  • 1 can cream of chicken soup
  • 1 Tbsp. margarine
  • 3 1/4 c. milk
  • 1/2 c. evaporated milk
  • salt and pepper
  • 1 small carrot, grated

Directions

    Cook potatoes and onion, covered, in small amount of water until tender.

    Drain well and mash by hand. Add remaining ingredients and mix well.

    Return to low heat and simmer just until hot. Do not boil!

    Can sprinkle parsley over top for garnish.
