- 3 medium leeks, chopped
- 1/3 c. onion, chopped
- 6 Tbsp. butter
- 6 Tbsp. flour
- salt and pepper to taste
- 8 c. chicken stock
- 5 c. diced potatoes
- 1/2 to 3/4 c. heavy whipping cream
Directions

1Saute leeks and onion in butter; add flour and mix well.

2Add chicken broth to potatoes with onion mixture.

3Season to taste with salt and pepper.

4Cook until potatoes are done, about 8 minutes.

5Add whipping cream and heat through.
