- 6 medium potatoes, peeled and diced
- 2 medium carrots, diced
- 6 medium celery stalks, diced
- 2 qt. water
- 1 onion, chopped
- 6 Tbsp. oleo
- 6 Tbsp. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 c. milk
Directions

1In large kettle, cook potatoes, carrots and celery in water until tender; drain, reserving liquid.

2In same kettle, saute onion in oleo until soft.

3Stir in flour, salt and pepper. Gradually add milk, stirring until thickened.

4Stir in cooked vegetables.

5Add 1 cup or more of reserved liquid until soup is desired consistency.

6Yields 8 to 10 servings.
