  • 1 chopped onion
  • 6 medium potatoes
  • 2 carrots (medium size)
  • 6 celery stalks, diced
  • 2 qt. water
  • 6 Tbsp. butter
  • 6 Tbsp. flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 c. milk

Directions

    Combine onion, potatoes, carrots, celery stalks and water; cook until tender. Save the liquid.

    Stir flour into butter, salt and pepper.

    Gradually add milk; stir until thickened, then add vegetables and enough liquid to make soup a desired consistency. This will make about 2 1/2 quarts.
