Potato Soup

Ingredients

  • 5 lb. white potatoes
  • 1 large onion
  • 9 c. water
  • 2 c. dry milk
  • 1 lb. butter or margarine
  • salt and pepper to taste

Directions

    Peel and dice potatoes.

    Peel and cut up onion.
  3. 3
    Cook potatoes and onion in 8 cups water.

    When done, remove 2 cups water and reserve.

    Add butter to hot potatoes.

    Mix dry milk with reserved potato water.

    Mash potatoes coarsely.
  8. 8
    Add milk to potatoes.
  9. 9
    If desired, add additional water, salt and pepper to taste.
