  • 1 large onion, chopped fine
  • 3 sticks celery, chopped fine
  • 6 Tbsp. butter
  • 2 slices white bread, torn
  • 3 c. mashed potatoes
  • 2 Tbsp. minced fresh parsley

Directions

    In a large saucepan, saute the onion and celery in butter until tender.

    Remove from the heat.

    Add bread, potatoes and parsley.

    Mix well.

    Spoon into a greased 1-quart casserole. Bake, uncovered, at 350° for 45 minutes or until top is lightly browned.
