Potato Wraps

  • 4 small new potatoes (1 1/2-inch diameter)
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. crushed bay leaves
  • 8 slices bacon, cut in half crosswise

Directions

    Preheat oven to 400°.

    Wash potatoes and cut into quarters. Sprinkle each with a mixture of seasoned salt, seasoned pepper and bay leaves.

    Wrap 1 bacon piece around each potato piece. Sprinkle with any remaining seasonings.

    Place in baking dish and bake, uncovered, for 20 minutes or until bacon is crisp and potatoes are cooked through.

    Drain on paper towels.

    Serve, if desired, with sour cream and chives.
