  • 6 medium all-purpose potatoes (2 lb.)
  • 1 tsp. salt
  • 6 slices bacon, diced
  • 1 c. finely chopped onion
  • 1/4 c. chopped parsley
  • 8 eggs
  • 1/4 tsp. black pepper
  • 1/4 tsp. paprika
