- 1/2 c. chopped onion
- 1 crushed garlic clove
- 2 Tbsp. olive oil
- 1/4 c. chopped parsley
- 1/4 c. chopped pimento
- 1 c. chicken broth
- 6 medium potatoes, thinly sliced
- ground black pepper
Directions

1Saute onion and garlic in olive oil until soft.

2Stir in parsley, pimento, pepper and broth.

3Remove from heat.

4Layer sliced potatoes in broth in skillet.

5Bring to a boil.

6Reduce heat, cover and simmer about 20 minutes until potatoes are soft. Lift potatoes with slotted spoon onto heated serving dish.

7Pour liquid over potatoes.
