  • 10 to 12 medium-large potatoes, thinly sliced (peeled or unpeeled as preferred)
  • 2 onions, finely chopped
  • 2/3 c. milk (skim, whole or evaporated)
  • 3/4 lb. sliced cheese (American, Swiss, mild Cheddar or a combination)
  • salt and black pepper
  • 1/2 c. grated Parmesan or Romano cheese
  • 1 stick margarine, thinly sliced
  • 1 Tbsp. chopped parsley

Directions

    Into large casserole or Dutch oven, layer potatoes, margarine, onions, cheese slices, grated cheese and parsley.

    Lightly sprinkle with salt and pepper.

    Repeat layers to within 1 to 1 1/2-inches of top of pan.

    Pour milk around and over the layers.
