- 10 to 12 medium-large potatoes, thinly sliced (peeled or unpeeled as preferred)
- 2 onions, finely chopped
- 2/3 c. milk (skim, whole or evaporated)
- 3/4 lb. sliced cheese (American, Swiss, mild Cheddar or a combination)
- salt and black pepper
- 1/2 c. grated Parmesan or Romano cheese
- 1 stick margarine, thinly sliced
- 1 Tbsp. chopped parsley
Directions

1Into large casserole or Dutch oven, layer potatoes, margarine, onions, cheese slices, grated cheese and parsley.

2Lightly sprinkle with salt and pepper.

3Repeat layers to within 1 to 1 1/2-inches of top of pan.

4Pour milk around and over the layers.
