  • 8 to 10 medium red potatoes (about 2 lb.)
  • 1 (2 oz.) jar chopped pimentos, drained
  • 1/2 c. chopped onion
  • 1/8 tsp. garlic salt
  • 1/8 tsp. onion salt
  • 1 lb. processed American cheese, cut in 1/2 inch cubes
  • 2 slices bread, cut in cubes
  • 1/4 c. butter or margarine, melted

Directions

    Place unpeeled potatoes in large saucepan and cover with water; cook until tender but firm.

    Drain.

    Cut potatoes in 1 inch cubes. Place in an ungreased 2 1/2-quart baking dish.

    Add pimentos, onion, garlic salt and onion salt; toss gently.

    Sprinkle with cheese.

    Place bread cubes on top and pour butter over all.

    Bake uncovered at 350° for 30 minutes or until bread is toasted.

    Yields 10 to 12 servings.
