- 1 c. butter
- 4 eggs
- 1 c. sugar (1/4 c. Equal = 1 c. sugar)
- 1 1/2 tsp. vanilla
- 2 c. all-purpose flour
- 1/4 tsp. salt (optional)
- 1/4 tsp. ground nutmeg
Directions

1Bring butter and eggs to room temperature.

2Grease the bottom and about 1 inch up the side of a 9 x 5 x 3-inch loaf pan.

3In small mixer bowl, beat butter at medium speed of electric mixer until creamed and fluffy.

4Gradually add sugar, beating at medium speed 6 minutes or until light and fluffy.

5Add vanilla, eggs one at a time, beating about 1 minute each.

6Scrape bowl frequently. Mix flour, salt and nutmeg.

7Gradually add dry ingredients to egg mixture and beat until thoroughly blended.

8Turn batter into prepared pan.

9Bake at 325° for 60 to 65 minutes.

10Cool in pan for 10 minutes.

11Remove.
