Prawn Curry

  • 6 1/2 tbsp butter
  • 1 None onion, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp curry powder (or paste)
  • 1/3 cup all-purpose flour
  • 3 cups milk
  • 1 1/2 lb cooked prawns, peeled and deveined
  • 1 None tomato, chopped
  • 1 None lemon, juiced
  • 2 tsp chili sauce
  • 2 tsp brown sugar
  • None None steamed rice, to serve
  • None None fresh cilantro sprigs, to serve
  • None None papadums, to serve

Directions

    Melt butter over medium heat. Add onion, garlic and curry powder. Cook for 2-3 mins, until tender. Add flour. Cook, stirring, for 1 min. Gradually whisk in milk, until smooth. Cook, stirring, until sauce boils and thickens. Reduce heat and simmer for 3 mins. Add prawns, chopped tomato, lemon juice, chili sauce and brown sugar. Gently heat for 2-3 mins.

    Serve with steamed rice, cilantro and papadums.
