- 12 lemons
- 34 cup kosher salt
- 34 cup sugar
- lemon juice, to fill
Directions

1Wash lemons under warm water.

2Make a series of lengthwise slices in each lemon, without cutting it through, 8-10 slices in each lemon.

3One at a time, layer each lemon with one tablespoon each of salt and sugar in a large jar.

4Add enough lemon juice to fill the jar.

5Cap tightly and refrigerate at least 30 days, turning and shaking every few days.
