  • 12 lemons
  • 34 cup kosher salt
  • 34 cup sugar
  • lemon juice, to fill

Directions

    Wash lemons under warm water.

    Make a series of lengthwise slices in each lemon, without cutting it through, 8-10 slices in each lemon.

    One at a time, layer each lemon with one tablespoon each of salt and sugar in a large jar.

    Add enough lemon juice to fill the jar.

    Cap tightly and refrigerate at least 30 days, turning and shaking every few days.
