Ingredients
- any size beef roast
- garlic
- white vinegar
- salt and pepper to taste
Directions

1Thaw roast if frozen.

2Let roast stand at room temperature for at least 1 hour.

3Rub roast with vinegar.

4Season with salt, pepper and fresh garlic.

5Preheat oven to 375°.

6Place roast, rib side down, on a rack in baking pan.

7Roast for 1 hour.
-
8Allow roast to remain in oven all day.
-
9Do not open door!
-
10One hour before serving, turn oven back on to 375° and reheat roast.

11Do not remove roast from oven or open door until ready to serve.
-
12For well done roast, cook 15 to 30 minutes longer before serving.
