  • 1 lb. pinto beans (dried)
  • 3 qt. water
  • 1 lb. can tomatoes
  • 1 large onion, chopped
  • 8 slices bacon, chopped
  • 1 1/2 tsp. salt
  • 3/4 c. sliced celery
  • 3/4 tsp. cinnamon
  • 6 Tbsp. sugar
  • 3 Tbsp. vinegar

    Wash beans. Put in a 6-quart kettle with 3 quarts water and simmer for about 4 hours. Mix remaining ingredients with beans and water. Place in a 4-quart casserole. Cover and bake at 350° for 2 to 3 hours. Add more water if necessary. Yields about 10 servings.
