- 1 lb. pinto beans (dried)
- 3 qt. water
- 1 lb. can tomatoes
- 1 large onion, chopped
- 8 slices bacon, chopped
- 1 1/2 tsp. salt
- 3/4 c. sliced celery
- 3/4 tsp. cinnamon
- 6 Tbsp. sugar
- 3 Tbsp. vinegar
Directions

1Wash beans. Put in a 6-quart kettle with 3 quarts water and simmer for about 4 hours. Mix remaining ingredients with beans and water. Place in a 4-quart casserole. Cover and bake at 350° for 2 to 3 hours. Add more water if necessary. Yields about 10 servings.
