- 8 medium potatoes, cooked and peeled
- 1 cup sour cream, reduced fat to lower fat and calories
- 1/4 cup butter, melted
- 3/4 cup milk
- 2 eggs, lightly beaten
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon chives
Directions

1Preheat oven to 375°F Coat a large casserole dish with non-stick cooking spray.

2Mash potatoes in a large bowl.

3Add sour cream, butter, milk, eggs and salt; mix well.

4Spoon potato mixture into prepared casserole dish. Sprinkle with pepper and paprika.
