Puffy Omelet

  • 4 eggs, separated
  • 1/4 c. water
  • 1/4 tsp. salt
  • dash of pepper
  • 1 Tbsp. butter

Directions

    In small mixing bowl, beat egg whites with water and salt until stiff but not dry.

    In another bowl, mix yolks with pepper until thick and lemon colored.

    Fold in egg whites.

    Heat oven to 325°.

    Heat butter in skillet until hot and pour omelet mixture into skillet.

    Cook until light and fluffy.

    Place in oven and bake 12 to 15 minutes (use oven safe skillet).

    Tip skillet to loosen omelet.

    Fold omelet in half being careful not to break. Slip onto plate.

    Serve warm.
