- 1 box brown sugar
- 7 leek stalks
- 1 cup smoked salt
- 1/2 cup vinegar
- 4 ounces water
Directions

1place shoulder in pan cover with water

2in a separate bowl mix brown sugar , vinegar, smoked salt, red wine place
-
3place leek stalks in pan pour mixture
-
4pour in water cover completely no air holes braise for 2 hours take out rest and refrigerate for 4 hours

5place back in oven at 350 for 4 more hours rest for 1 hour partially covered
