  • 10 LBS picnic shoulder
  • 1 bottle red wine
  • 1 box brown sugar
  • 7 leek stalks
  • 1 cup smoked salt
  • 1/2 cup vinegar
  • 4 ounces water

    place shoulder in pan cover with water

    in a separate bowl mix brown sugar , vinegar, smoked salt, red wine place

    place leek stalks in pan pour mixture
  4. 4
    pour in water cover completely no air holes braise for 2 hours take out rest and refrigerate for 4 hours

    place back in oven at 350 for 4 more hours rest for 1 hour partially covered
