  • 1 c. oatmeal
  • 1 c. all-purpose flour (unsifted)
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. fresh or canned pumpkin
  • 1 egg, slightly beaten
  • 1 stick butter
  • 1 tsp. vanilla flavoring
  • 1/2 c. raisins
  • 1/2 c. nuts

    In medium bowl, combine oatmeal, flour, sugar, baking powder and salt. Stir to mix. Make well in center; add pumpkin, egg, butter and vanilla. Stir until dry ingredients are moistened. Stir in raisins and nuts. Spread mixture in a 9 x 9 pan that has been greased. Bake at 350° for 35 to 40 minutes or until firm and lightly browned. Let cool in pan. Cut into bars.
