- 4 beaten eggs
- 3 c. sugar
- 1 (16 oz.) can pumpkin
- 1 c. cooking oil
- 1/3 c. all-purpose flour
- 1 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1 tsp. salt
- 1 (8 oz.) pkg. pitted dates
- 1 1/2 c. chopped walnuts
Directions

1Combine all dry ingredients.

2Stir in beaten eggs, oil, water and vanilla.

3Mix in canned pumpkin, dates and nuts.

4Stir until smooth textured.

5Pour into four 7 x 3 x 2-inch loaf pans or two 9 x 5 x 3-inch loaf pans, greased.

6Bake at 350° for 55 minutes or until lightly browned. Cool 10 minutes.
