Ingredients
- 3 1/2 c. sifted all-purpose flour
- 1 tsp. salt
- 2 1/2 c. sugar
- 2 tsp. baking soda
- 2 c. pumpkin puree
- 1 c. vegetable oil
- 1/2 c. water
- 4 eggs, beaten
- 3/4 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 c. chopped nuts (optional)
Directions

1Preheat oven to 350°.

2Sift flour, salt, sugar and baking soda together.

3Mix pumpkin, oil, water, eggs and spices together and combine with dry ingredients.

4Do not overmix.

5Add nuts, if desired.

6Bake in two well-greased 9 x 5 x 3-inch loaf pans for 45 minutes to 1 hour or until bread tests done.

7Turn out and let cool on wire racks.

8Makes 2 loaves.
