  • 1 deep dish all vegetable shortening pie crust
  • 1 1/2 c. canned pumpkin (not pie filling)
  • 1/2 c. half and half
  • 3 eggs at room temperature
  • 1 1/2 tsp. vanilla extract
  • 2 c. sugar
  • 1/2 c. plus 1 Tbsp. butter or margarine
  • 1/4 tsp. salt
  • scant 1/4 tsp. ground ginger
  • scant 1/4 tsp. ground cloves
  • scant 1/2 tsp. cinnamon

Directions

    Process pumpkin and next 9 ingredients in container of an electric blender or food processor until smooth, stopping once to scrape down sides.

    Pour pumpkin mixture into prepared pie crust. Bake at 350° for 1 hour and 10 minutes. or until knife inserted in center comes out clean.

    Cool completely on a wire rack.
