- 2 cups packed light brown sugar or 2 cups dark brown sugar, your choice
- 1 cup shortening
- 2 cups pumpkin
- 2 eggs
- 3 12 cups all-purpose flour
- 1 12 teaspoons cinnamon
- 1 teaspoon pumpkin pie spice
- 12 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 12 teaspoons vanilla extract
- 34 cup evaporated milk, heated, estimated amount
- 12 cup shortening
- 12 cup butter
- 1 teaspoon vanilla extract
- 1 cup sugar
Directions

1Preheat oven to 350 degrees F.

2For cookies.

3Cream the brown sugar and 1 cup shortening.

4Add remaining cookie ingredients and mix until well blended.

5Drop by heaping teaspoons full onto greased cookie sheet.

6Flatten with the back of spoon, leaving small rounded indentation in center of cookie.

7Bake for 10-12 minutes.

8Let cook slightly on baking sheet then remove to wire rack to cool completely.

9Filling: Heat milk.

10Cream together the remaining filling ingredients.

11Slowly add milk and beat until creamy.

12You may not need to use the entire 3/4 cup of milk.

13Use just what you need to get the consistency you want.

14Take 1/2 of the cookies and divide the filling among these cookies.

15Place the remaining cookies on top to make a sandwich.
