- 3 eggs
- 1 c. granulated sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1 c. finely chopped pecans or walnuts
Directions

1Beat eggs on high mixer speed for 5 minutes, then gradually beat in sugar.

2Stir in pumpkin and lemon juice.

3Stir rest of the dry ingredients together, then fold into pumpkin mixture.

4Spread in greased and floured 15 x 10 x 1-inch pan.

5Top with nuts; bake at 375° for 15 minutes.

6Turn out on kitchen towel sprinkled with powdered sugar.

7Roll towel and cake together.

8Cool 20 minutes; unroll.
