Pumpkin Nut Roll

- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 3/4 c. flour
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1 c. chopped nuts
Directions

1Beat the eggs on high speed with an electric mixer for 5 minutes.

2Gradually add the sugar.

3Blend in the pumpkin and lemon juice. Stir together, then blend in the flour, cinnamon, baking powder, ginger, nutmeg and salt. Spread batter in a greased and floured jelly roll pan. Sprinkle with the nuts.

4Bake at 375° for 15 minutes. Turn out onto a towel that has been covered with powdered sugar. Roll and cool.
