  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. flour
  • 2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 c. chopped nuts

Directions

    Beat the eggs on high speed with an electric mixer for 5 minutes.

    Gradually add the sugar.

    Blend in the pumpkin and lemon juice. Stir together, then blend in the flour, cinnamon, baking powder, ginger, nutmeg and salt. Spread batter in a greased and floured jelly roll pan. Sprinkle with the nuts.

    Bake at 375° for 15 minutes. Turn out onto a towel that has been covered with powdered sugar. Roll and cool.
