  • 2 cups self-rising flour
  • 1 egg
  • 1 1/2 cups pureed pumpkin
  • 1 1/2 cups milk
  • 1 tsp pumpkin pie spice mix(or to taste)
  • 3 tablespoons sugar
  • 1 tsp vanilla extract
  • maple syrup, toasted pecans to serve

    mix all ingredients together in large bowl until batter has small lumps

    heat large skillet over medium heat and grease with butter or cooking spray

    using scant 1/4 cup per pancake cook until top has small bubbles and sides are firm

    flip and cook on other side until brown
