- 1 c. flour
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. ginger
- 3 eggs
- 1 c. sugar
- 3/4 c. cooked pumpkin
- 1 tsp. lemon juice
- 1 c. pecans, finely chopped
Directions

1Sift together first 4 ingredients; set aside.

2Beat eggs 5 minutes.

3Add sugar to eggs 1 tablespoon at a time.

4Add pumpkin and lemon juice to egg mixture.

5Fold flour mixture into egg mixture until blended.

6Spread in greased and floured jelly roll pan.

7Sprinkle with pecans.

8Bake at 375° for 15 minutes.

9Turn out on cloth sprinkled with powdered sugar.

10Roll up and cool.

11Unroll cake, spread on filling.

12Reroll cake.

13Place roll, seam-side down. Refrigerate at least 4 hours.

14Dust with powdered sugar.

15Yields 8 to 10 servings.
