  • 1 teaspoon lemon juice
  • 34 cup all-purpose flour
  • 1 teaspoon baking powder
  • 12 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup powdered sugar
  • 14 cup butter, softened
  • 8 ounces cream cheese
  • 12 teaspoon vanilla

    Blend eggs on high for 5 minutes.

    Gradually, add sugar - beat well.

    Stir in pumpkin and lemon juice.

    Then add all dry ingredients.

    Bake in a greased and floured jelly roll pan at 375 degrees for 15 minutes.

    When cake is done, turn onto a kitchen towel that has been sprinkled with powder sugar.
